"The Journal of Food Science" ran a scientific test in 1974, which demonstrated the power of Cinnamon over most Yeasts and Fungi. Slices of Wheat - White - Rye and Raisin breads were made without the usual mold inhibitors and then subjected to different * aflatoxins ... (see below) molds that can cause liver cancer and that are so toxic they can kill humans and animals and often occur in food. The toxic molds grew aggressively on all the breads , except the Raisin, where the growth was said to be very ("Scant or not visible at all"). The scientist wanted to find whether this action was because of the (raisins) or the (cinnamon). They discovered that as little as 2% of the spice per ml of a yeast-extract and sucrose broth inhibited between 97% and 99% of these deadly toxic molds.*Aflatoxins : "Aflatoxins produce acute necrosis, cirrhosis, and carcinoma of the liver in a number of animal species; no animal species is resistant to the acute toxic effects of aflatoxins; hence it is logical to assume that humans may be similarly affected." Cinnamon Benefits for Blood Sugar Levels Study confirms......Scandinavian scientists have reported that consuming as little as three grams of cinnamon a day, may help improve blood sugar levels. Ingesting this spice led to reduction of blood insulin levels, the hormone that is responsible for controlling blood sugar. It also increased levels of a peptide that is said to work by delaying emptying of the stomach - according to a study involving 15 people. The results of this study are published in the "American Journal of Clinical Nutrition". "Our finding that cinnamon decreases the insulin demand, despite the lack of change in blood glucose concentrations, was probably due to enhanced glucose uptake via stimulation of the insulin receptor," wrote the researchers, led by Joanna Hiebowicz from Malmo University Hospital. "Gastric emptying, as well as other factors, regulates the postprandial blood glucose response, and a delay in gastric emptying leads to a lower postprandial blood glucose concentration." Cinnamon benefits for Type II Diabetes and Cinnamon benefits in lowering Cholesterol levels .....A Pakistani study indicates that as little as half of a teaspoon of cinnamon powder may help decrease blood sugar and other risk factor levels in patients with diabetes. This scientific study included 30 men and 30 women with Type II diabetes and the participants average age was 52. After a 40-day period, the blood sugar levels of the diabetic subjects in the cinnamon group had dropped by an average of 20% below those of the control group, and their triglyceride, low-density lipoprotein (LDL) cholesterol, and total cholesterol levels had also fallen. In vitro tests showed that the spice had also neutralized free radicals, which are increased in patients with diabetes. After the treatment period, blood sugar levels in the cinnamon group rose once again. Scientists concluded, "The results of this study demonstrate that intake of one, three or six grams of cinnamon per day reduces serum glucose, triglyceride, LDL cholesterol, and total cholesterol in people with Type II diabetes and suggest that the inclusion of cinnamon in the diet of people with Type II diabetes will reduce risk factors associated with diabetes and cardiovascular diseases."
